Vegan Country Gravy drizzled over Vegan Nut Loaf and Stuffing with a side of fresh Cranberry Sauce make the perfect comfort food dinner to be thankful for.
This vegan gravy is thick, creamy, and full of autumn seasonings. It's rich, delicious, and hearty. While some might imagine a mushroom and onion gravy less flavorful than meat-based gravy, they clearly haven't tried this recipe.
We recommend using a mix of different mushrooms to add depth to the flavor. We used Shitake, Porcini, Button, and Cremini mushrooms in our most recent gravy. If you don't have a variety of fresh mushrooms available, you can also use dried mushrooms that you reconstitute. Pour enough boiling water over them so they're completely covered and let them sit for 20 minutes. Save this mushroom water because you can use it as part of the broth in this recipe.
We use flour in our Vegan Country Gravy rather than corn starch or arrowroot powder for the color and flavor, but you can substitute thickening agents if you prefer.
This recipe is beautiful with sliced mushrooms bubbling up from the creamy depths, but if you want a creamy vegan gravy you can use an immersion blender or other blender. One of our boys thinks he doesn't like mushrooms so we blend our gravy and finely chop our mushrooms for our Vegan Nut Loaf. They're hidden in our meal and his taste buds are learning to love mushrooms. This is one of our ninja-parenting techniques to help picky eaters expand their palates!
If you will be making Vegan Country Gravy for pairing with our Vegan Nut Loaf, you can save time by chopping enough garlic, onions, and mushrooms for both recipes at the same time. You have plenty of time to make the gravy while the Nut Loaf cooks.
You might also consider doubling this recipe. The left-over gravy makes a wonderful base for a Vegan Pot Pie or vegetable soup!
